Veggie Skewers

This is just a bit of inspiration for some yummy veggie skewers as I can not precise the quantities that I used, specially of the spices and sauces. As I loved this veggie skewers so much I wanted to share with you what I have used. Aubergine and courgette are a must, once grilled they melt in your mouth and the flavour is to dye for. The peppers add a bit of crunch and the pineapple gives the right amount of sweetness making it feel ever so tropical. The tofu is totally optional and most times I use veggies only, but tofu does add a hearty flavour specially if smoked. Enjoy the BBQ with the amazing weather we have been having this summer.

Veggies used:

  • 1 Courgette
  • 1 Aubergine
  • 2 Red Onions
  • 1 Red pepper
  • 1 Yellow pepper
  • 1/4 Pineapple
  • 140g Firm smoked tofu


  • Olive oil
  • Salt and Pepper
  • Balsamic vinegar
  • Maple syrup
  • Liquid aminos or soya sauce
  • Paprika or chilly powder

Cut all the veg in cubes and add them to a big bowl. Sprinkle all the sauces and spices and mix well with the help of your hands. Stick the veggies in skewers and grill either on the BBG or in the oven.

Note: Please don’t forget that in case you are using wooden skewers you need to wet them before sticking the veg, so they don’t burn.
