Tomato and Nectarine Side Salad with Croutons

This is an end of summer easy side salad that is very Tasty. The combination of the sweet and the sower are on point here. The softness of the tomatoes and the ripe nectarines goes so well with the crunchy delicious tangy croutons. Perfect to serve with other salads as well as a yummy oven dish.


  • 2 Slices of bread (I used rye, you can use sourdough or any other bread)
  • 2 + 3 TBSP Olive oil
  • 2tsp Rosemary
  • Salt and Pepper to taste


  • 3 Tomatoes
  • 2 Ripe nectarines (or peaches)
  • 2TBSP olive oil
  • 1TBSP Balsamic vinegar
  • A few basil leaves
  • Salt and Pepper to taste


For the Croutons, start by cutting the bread in small cubes. Heat a non-sticky frying pan with 2 tablespoons of olive oil, 2 teaspoons of rosemary, a sprinkle of salt and freshly ground pepper. Once hot add the croutons and keep stir-frying. Once they start to gain some colour and become more crunchy add the rest of the olive oil, sprinkle a little more salt and freshly ground pepper. When getting crunchy and golden test one to see if you need to add any more rosemary, salt or pepper, you want all these 3 flavours coming out. Once nice and crispy turn off the stove and put them in a bowl to cool down while you prepare your salad.

For the salad simply chop everything, plate and dress with Olive oil, balsamic Vinegar, salt and pepper to taste. Add your croutons on top and enjoy.
