Sweet Potato, Mushrooms Wrap

Most delicious wrap ever if I say so myself! Plant based meals don’t cease to impress me on the flavours and textures that you can create! These wraps are super quick and easy to put together and are out of this world delicious! By now you’re thinking that I’m over exaggerating and using way too many adjectives to describe it but honestly at your next opportunity head over to the kitchen (or persuade someone to make it for you, also works well and you save time) and you’ll see what I mean! Makes 3-4 wraps


  • 4 wraps (I used multi seeds wraps)
  • 300g Mushrooms
  • 100g Spinach
  • 450g Sweet Potatoes
  • 60g sun-dried tomatoes
  • 3 garlic cloves
  • Salt and pepper to taste
  • Around 1/2 teaspoon of chilly flakes
  1. Peel the sweet potatoes, cut in small parts and either steam or boil till soft with 1 pealed garlic clove. If you’re feeling strong mash them manually or if you’re lazy like me add them to a blender or food processor with 1 tablespoon of olive oil, salt and pepper to taste and blend/mash till super nice and smooth
  2. Slice the mushrooms, wash and rinse the spinach and cut the sun-dried tomatoes in small bits
  3. Heat a frying pan with 2 tablespoons of olive oil together with the sliced mushrooms and chilly flakes. Stir-fry at high heat till the mushrooms become grilled with a nice and golden colour. All the water released by the mushrooms should have evaporated at this point
  4. Reduce the heat, add the spinach, sun-dried tomatoes and crush the 2 remaining garlic cloves. Mix well continuously till the mushrooms wilt and transfer to a bowl
  5. I like to warm up and slightly toast my wraps and for this I used the same pan where I cooked the mushrooms. This way the wraps absorb some of the flavours left in the pan
  6. Spread the sweet potatoes mash into half of the wrap and add the mushrooms concoction on top and close your wrap in half and than in a quarter
  7. Yum!
