Most delicious kale salad ever that everyone will love. I know that raw kale can sound strange for some that are not so used to a plant based diet but trust me that even the meat and 2 veg folk loved it. The trick is massaging the kale with liquid aminos and nutritional yeast. If you have never bought any of this ingredients I highly recommend them as they add so much flavour to a variety of dishes like tomato sauces, stir-fries, pasta, etc. I have added links to amazon but you can also find it in Waitrose and Ocado. This salad is full of flavours and it’s super crunchy! Works really well as a side dish but also as a main and the next day for a pack lunch is a dream 🙂
Serves 2
Ingredients:
- 160g Kale
- Hand full Cherry Tomatoes
- 1 Avocado
- 3 Stalks of Spring Onion
- 1/4 Cucumber
- 1 Daikon (similar to radish, you could also use 1 apple)
- 1tbsp Sun dried tomatoes
- 2tbsp Blak olives
Sauce:
- 2tbsp Liquid Aminos (soya sauce alternative)
- 2tbsp Nutritional yeast
- 2tbsp Extra virgin olive oil
Method:
- Thoroughly wash your kale and remove the bigger stems. Rinse well and add to a big bowl. Add all the sauce ingredients ( 2 tablespoons liquid aminos, 2 tablespoons nutritional yeast and 2 tablespoons of extra virgin olive oil) massage the kale with your hands for about 2 minutes till it becomes tender and absorbs the sauce.
- Wash and finely chop all the other veg and add to the salad bowl mixing well with the kale. Sprinkle some more Olive oil if you like and a a bit of freshly ground pepper.
