Spring Quinoa

You can put together this super colourful quinoa really quick and it’s so delicious and fresh. It’s perfect for your pack lunches for work, together with some avocado, tomato, green leaves and some hummus. You only need two colourful peppers and some green beans. Stir-fry the veggies while your quinoa is boiling and then mix everything together adding one of your favourite fresh herbs. I love parsley but I’m sure coriander would also work very well. You can create a super healthy and easy lunch on the go just like that. Wishing you a colourful and delicious pack lunch!

1 Yellow pepper

1 Red pepper

½ Pack green beans

1/2cup Quinoa

Hand full of parsley

2tbsp Olive oil

Salt and pepper to taste


  1. Boil the quinoa and set aside.
  2. Add the olive oil to a stir-fry pan.
  3. Once the olive oil is hot add your vegetables with a pinch of salt and pepper to taste and cook them at a medium heat for 8 min till they become softer but still crunchy.
  4. Once your quinoa is ready mix everything together, vegetables, quinoa and parsley. Your spring quinoa is ready to serve with a colourful salad.
