Rainbow Salad

Super easy delicious salad, perfect for lunch or a quick dinner. You can put all together in less than 10 minutes. Starts with a base of stir-fried kale and cabbage and that’s the only cooking required. Topped with grated carrot, sweet corn and olives making it fresh and so tasty. I used the carrot stalk to top the salad which is very tasty and full of nutrients πŸ™‚

Ingredients:

  • 2tbsp Olive oil
  • 1 Carrot
  • 1/4 red cabbage
  • Tin sweet corn
  • Hand full black olives
  • Hand full walnuts
  • 1 Tomato
  • Salt and pepper
  • 5 Leaves Kale (as per the one in the picture but you could also use the small curly one)

Method:

  1. Start by slicing the red cabbage and the kale. Add 1 tablespoon of olive oil to a frying pan together with the walnuts, the kale and the cabbage, pinch of salt and pepper. Stir-fry for a few minutes so it gets tender and soft but still crunchy.
  2. Meanwhile grate your carrot and chop the tomato.
  3. Plate everything mixing with a tablespoon of olive oil, pinch of salt and pepper to taste. Sprinkle with some tahini and the carrot stalk if you have and enjoy πŸ™‚
