Super easy delicious salad, perfect for lunch or a quick dinner. You can put all together in less than 10 minutes. Starts with a base of stir-fried kale and cabbage and that’s the only cooking required. Topped with grated carrot, sweet corn and olives making it fresh and so tasty. I used the carrot stalk to top the salad which is very tasty and full of nutrients 🙂
Ingredients:
- 2tbsp Olive oil
- 1 Carrot
- 1/4 red cabbage
- Tin sweet corn
- Hand full black olives
- Hand full walnuts
- 1 Tomato
- Salt and pepper
- 5 Leaves Kale (as per the one in the picture but you could also use the small curly one)
Method:
- Start by slicing the red cabbage and the kale. Add 1 tablespoon of olive oil to a frying pan together with the walnuts, the kale and the cabbage, pinch of salt and pepper. Stir-fry for a few minutes so it gets tender and soft but still crunchy.
- Meanwhile grate your carrot and chop the tomato.
- Plate everything mixing with a tablespoon of olive oil, pinch of salt and pepper to taste. Sprinkle with some tahini and the carrot stalk if you have and enjoy 🙂
