Potato Salad

Whoever came up with the idea of calling cold potatoes a salad was a genius, because who does’t love carbs with creamy mayo and we get to call it a salad ๐Ÿ™‚ This is super easy and it’s an amazing side dish! Pretty much all you need to do is boil the potatoes let them cool down and mix with mayo and olives ๐Ÿ™‚ You can also use cappers but olives is my fav!

๐Ÿ”ธ750g Mini white potatoes
๐Ÿ”ธ4-5 TBSP Vegan Mayo
๐Ÿ”ธ80-100g Green Olives (or capers)
๐Ÿ”ธ1TBSP Olive oil
๐Ÿ”ธSalt and Pepper to taste (a lot of fresh ground pepper)

  1. Wash the potatoes thoroughly (no need to peel), cut them in halves, put them in a saucepan cover with water and a good pinch of salt so they get flavour, around 2/4 teaspoon of salt. Boil them for 10 minutes or till the inside is soft but the potato keeps its consistency and crunchiness. Put them in the fridge to chill (or freezer for speed).
  2. Chop the olives.
  3. Once the potatoes are completely chilled sprinkle some olive oil, salt and loads of fresh ground pepper, add the mayo and the olives and mix very well. Taste a potato to check if you need to add any more salt or pepper.
