#PackLunch #2 Tasty Kale Salad

One of my favourite pack lunches and it’s so very delicious and quick to prepare. Massaged kale with tahini, olive oil and a sprinkle of salt and pepper is a supper tasty and nutritious combination that will satiate you the right way for the afternoon. You can top it with pretty much everything, but one of my favourites is avocado, making it extra creamy. Sprinkle with some seeds to add extra texture and a bit of crunch to your yummy lunch.

Ingredients

  • 100g kale
  • 1 avocado
  • 1 red pepper
  • Sprinkle of pumpkin seeds

For the sauce:

  • 1tbsp Olive oil
  • 2tbsp Tahini
  • 1/2tsp salt
  • pepper to taste
  1. Wash the kale and remove any harder/bigger stems and rinse it very well to get rid of any excess water.
  2. Place your kale in a bowl together with the tahini, olive oil, salt and pepper and massage with your hands for a couple of minutes so all the kale gets softer and well involved with the sauce.
  3. Chop the rest of the ingredients and add to your delicious kale.
