#Pack Lunch #1

Lunch is the most important meal for me. It’s essential to keep my energy levels up and maintain my body full of vitality during the afternoon. We all have experienced that sluggish feeling and a burst of tiredness after lunch when we choose to have some cheeky meal that just doesn’t feed our body the right way and all we want is a snooze.

This can be avoided by choosing the right foods. When we nourish our body with the right nutrient content it needs to keep function, we feel super energetic and strong and with the will to take on the world.

I hope my lunch options can offer you loads of ideas for your meals and inspire you to take food with you to work, instead of going for restaurants or supermarkets all the time. This way you can be full of energy, keep your body healthy and save loads of money.

 

This pack lunch couldn’t be easier and it’s also very tasty. The raw ingredients gives a very fresh touch while the sweet potatoes, that I cooked the night before, links all together in a very delicious way. Brown rice provides extra protein and helps fill you up so you don’t get hungry. With this meal I also had some hummus and Ryvita.

  • 1 Tomato
  • 1 Apple
  • 1 Red pepper
  • Around 1/2 roasted sweet potato – leftover from last night dinner
  • Around 1/2 cup cooked brown rice from my sunday food prep for the week
  • A few rocket leaves
  • A sprinkle of sunflower & pumpkin seeds
  • A sprinkle of salt and pepper
  • 2 tbsp olive oil in a little container

1. Cut all ingredients in bite sizes and mix it all up. That’s it!

Top tip: I take the olive oil on a separate container so the salad keeps nice and fresh till I’m ready to devour it.
