I am absolutely crazy about this sauce. It’s so delicious and goes well with so many dishes. I love it with pasta, makes it so comforting and extra creamy. It also goes really well with stuffed sweet potatoes, somehow it makes that dish extra special and very scrumptious.
The trick to this sauce is to soak your cashews. If you have time leave it in water for a couple of hours. Half an hour will also work but you might need to add an extra few spoons of water when making the sauce. If you want to be super speedy soak your cashews in hot water for 10 to 15 min.
You can keep the sauce in the fridge for around 1 week if kept in an air tight container and you can also freeze it in small amounts so it’s ready and waiting for you when you have a craving for some comforting food like this amazing pasta here.
1cup (140g) of cashews
Juice of ½ lime
1/3cup Water + a few extra tbsp.
- Soak the cashews in water for at least 30 minutes.
- Rinse the cashews.
- In a food processor mix the cashews, juice of ½ lime, salt and water.
- Process it till it becomes a creamy paste. You might need to add a few more tablespoons of water in case it’s not getting super creamy and also it depends on the consistence you wish to obtain.
Top Tip: I have also tried using a blender and a juicer to make this sauce and it also works well. Add a bit more water so it helps to blend better.
