Energy Bites

This is the easiest and most simple snack ever and it’s super yummy! Only has 2 ingredients, almonds and dates, and takes no time to make. I’m a snack kind of girl. I just love to snack, especially on sweet stuff. But when I get that feeling that I just want a special treat I try to look for something yummy (most of the times sweet) but at the same time somewhat that will nourish my body.

You can take this energy bites with you anywhere and it lasts forever in the fridge (3weeks to 1 month, thought I must say it never lasted that long with me) you can also freeze it, which I do to avoid finishing the all batch in one go. These super balls are packed with energy that will give you loads of vitality.

Oh, and by the way, almonds increase levels of vitamin E, which is a powerful antioxidant that defends your cells against damage. Dates are Wonderfully delicious and super high in magnesium that has been said to be helpful with many disorders like migraines, insomnia and symptoms of depression.

But we must also remind ourselves that dates are super high in sugar (even though natural sugar) so lets try not go too crazy about it and eating them all at once.

Eny Balls

Makes 15 to 18 balls

1cup (150g) almonds

1cup (170g) dates – I used soft dates. For this recipe it’s not necessary to use medjool ones if you make sure the ones you buy are soft enough.

 

  1. With your food processor, blend the almonds for 1 min
  2. Add the dates and process for 2-3min
  3. Shape some little balls with your hands
  4. Store in the fridge or freezer. Enjoy!
