Baby Potatoes Canapés

How cute are these potato bites? and they are so delicious! It’s a super cute canapés for Christmas and it can be pre made the day before and kept in the fridge for the next day allowing you to be stress free on Christmas day! You basically slightly roast the potato skins and than you scoop the inside and mix with some spices and place it back in on the potato skins. It’s yummy both cold and hot but I find them extra special when out of the oven with a roasted top. Yum!

Ingredients:

  • 500g Baby white potatoes
  • 1/2 Sweet potato
  • 2 garlic cloves
  • 1tbsp Olive oil
  • Pinch salt

Stuffing:

  • 1tbsp Olive oil
  • 1tbsp Nutritional yeast
  • 1/2tsp smoked paprika
  • 1 & 1/2tbsp Oat milk
  • Juice of half lemon
  • Salt & Pepper to taste

Preheat the oven at 180C

Start by washing very well the skin of your white potatoes and place them in a oven tray together with olive oil and salt. Peel the sweet potato and the garlic. Cut the sweet potato in small cubes so it cooks faster. Roast everything  in the oven till the insides of the white potatoes are soft as well as the sweet potato is cooked but not roasted, for about 20 to 30 minutes.

Gently scoop the insides of your baby potatoes. You don’t need to scoop everything as you want to ensure the potato skins remain intact so you can stuff them back again, so just remove the majority. Put all the stuffing ingredients into a food processor together with the insides of the baby potatoes, sweet potato and roasted garlic. Blend till smooth. You can also do it manually if you don’t have a food processor. Stuff your potato skins using a piping bag or just easily with a little spoon. Your potatoes are ready to be enjoyed but alternatively you can place them back in the oven to roast them top and served them hot.
