2 Layer Chocolate Cake

My birthday always equals to a BIG cake and most years this means a Chocolate Cake! This year I created my own and I couldn’t be more proud of it. It’s everything I wanted it to be: Chocolatey, moist, gooey, yummy, delicious and indulgent and I loved every bite (and my 4 slices) of it! It’s also quite simple to put together, you just need to mix wet and dry ingredients separately and than combine both, pop in the oven and that’s it. The icing is essential and makes the cake extra special and sweet so I highly recommend it. It’s also pretty straight forward to make it so another reason not to miss it! Dry Ingredients

  • 2cups Buckwheat Flower (260g)
  • 2cups Coconut sugar (260g)
  • 2/3cups Raw cacao powder (60g)
  • 2tsp Baking soda
  • 2tsp Vanilla powder
  • Pinch of salt

Liquid Ingredients

  • 2cups Warm water (420g)
  • 2/3cups Melted coconut oil (140g) (plus extra for greasing the tin)
  • 1tbsp Apple cider vinegar

Icing

  • 400g Dates
  • 1cup Almond milk
  • 2tbsp Raw cacao powder
  1. Preheat the oven to 180 degrees Celsius
  2. Mix the wet ingredients in a bowl
  3. On a separate bowl mix the dry ingredients
  4. Slowly add the dry ingredients into the wet ingredients, mixing slowly till both are combined
  5. You can either put the mixture into 2 greased low cake tins or in one a bit higher. If you choose to cook in 2 separate tins the cooking time is slightly less between 25 to 30 minutes.
  6. Bake in the oven for around 45 min till only the middle of the cake is slightly sticky and moist as this will firm up as it cools down
  7. Remove from the oven and leave to cool entirely
  8. While your cake cools down you can make the icing: Place all ingredients in a food processor and process till very smooth
  9. If you have baked your cake in 2 separate tins all you need to do is spread your icing in one of the half’s, place the other half on top and spread the rest of the icing on the top of the cake. If you have baked your cake in one tin, this cake is very easy to cut in half so you can spread the chocolate icing in the middle and than on the top
  10. Decorate with some red fruits to add some colour and freshness.
